Gold Harbor Black Bean Spaghetti Recipe

  • 1 package of Gold Harbor’s Black Bean Spaghetti (7.05 oz)
  • 1 tablespoon + 1 teaspoon of olive oil
  • 1 red onion – chopped
  • 2 tomatoes – cored and diced
  • 2 cloves of garlic – peeled and minced
  • 1/4 cup of water
  • 1 tablespoon of chili powder
  • 1/2 teaspoon of oregano
  • 1/2 teaspoon of smoked paprika
  • 1/4 teaspoon of cumin
  • 3 teaspoons of ground sea salt
  • 1/2 teaspoon of black pepper
  • 1 cup of corn – fresh or frozen
  • 2 cups of green bell peppers – thinly sliced
  • 1/2 of a lime



Heat 1 tablespoon of olive oil in a large pan on medium high heat. Add chopped onions and tomatoes and cook for 4 minutes. Add the garlic and cook for one minute. Add water, chili powder, oregano, smoked paprika, cumin, sea salt and pepper over medium heat. Add frozen corn & bell peppers and cook for 3 minutes. Bring a large pot of water to a boil. Salt the water with 2 teaspoons of salt and gently boil Gold Harbor’s Black Bean Spaghetti for 3-5 minutes until cooked al dente. Rinse under cool running water. Drain the water and toss spaghetti with cooked sauce. Drizzle some olive oil and the lime juice in the pasta and toss well.
