Gold Harbor Edamame Fettuccine Recipe

Don’t forget to follow us on Facebook and Twitter for updates! Here’s the recipe for our popular Edamame Fettuccine with Vegan Pesto Sauce (Serves 4 to 6):

  • 1 package of Gold Harbor’s Edamame Fettuccine (7.05 oz)
  • 1 1/2 cups fresh basil (loosely packed)
  • 1/3 cup olive oil or other high-quality and flavorful oil
  • 1 cup pine nuts (other nuts, such as almonds or walnuts may be substituted)
  • 3 cloves garlic
  • 1/3 cup nutritional yeast
  • 3/4 teaspoon salt
  • 1/2 teaspoon black pepper

Cooking Instructions:

Combine all ingredients in a food processor until nuts are ground. Pesto should still have texture and not be completely smooth. Add more salt and pepper to taste. Bring a large pot of water to a boil. Salt the water with 2 teaspoons of salt and gently boil Gold Harbor’s Edamame Fettuccine for 3-5 minutes until cooked al dente. Rinse under cool running water.
